Dijon vinaigrette

Ingredients
Very approximate. Adjust to ensure the consistency of the dressing.1 tsp dijon mustard4 tsp good quality extra olive oil2-3 tsp white balsamic vinegar
Directions
Spoon the mustard into a glass. Then add no more than one teaspoon of oil. Stir vigourously with the teaspoon until the oil is fully blended with the mustard. Repeat with remaining oil, no more than a teaspoon at a time. The mixture will becoming lighter and fluffier. If it starts to separate (through adding too much oil at once), stir even harder! At some point, if you add too much oil all together, this will become harder to achieve, so you can stop adding oil if you think you have reached the limit. Gently stir in the vinegar one dash at a time. The more vinegar you add, the more you'll dilute the creamy consistency, but of course gives you more dressing! Pour over a leafy green salad and toss.
