Vegetarian Ground Nut Stew

2 small onions, chopped3 cloves of garlic, chopped3-4cups of collards, shredded or chopped3 cups of winter squash, like butternut, or sweet potato, peeled and cubed3 cups tomato juice1 cup apple juice2 tsp chopped ginger root1/2 cup natural peanutbutter1 tsp red pepper1 tsp salt (or to taste)
In a large soup pot, saute onions and garlic in olive oil until translucent.
Add tomato juice, apple juice, ginger, red pepper, squash and collards.
Cook on medium to high heat for about 30 minutes or until collards and squash are soft, or the texture you prefer.
Add peanut butter and stir, cooking for 5-10 more minutes.
Add salt if desired.
