Apple and Sage Pork Chops

Ingredients
1 1/2 tsp rubbed sage1 tsp minced garlic1 tsp thyme1/2 tsp ground allspice1/2 tsp paprika1/8 tsp salt2 tbsp flour4 boneless pork chops (1/2-1" thick)2 tbsp olive oil1 medium onion, sliced2 red apples, thinly sliced1/2 cup apple juice
Directions
Mix flour and spices in a small bowl. Sprinkle both sides of pork chops with 1 tbsp of seasoned flour.

Cook: pork chops in hot oil in a large skillet on medium high heat until browned on both sides. Remove from skillet.

Add onion, cook and stir for 3 minutes or until tender. Add apples and cook and stir 2 minutes. Stir in juice and remaining flour until well mixed.

Return pork chops to skillet, bring to a boil. Reduce heat to low, cover and simmer 5 minutes or until desired doneness.

    I made this with some tart local "baking" apples, and substituted dry white wine for the apple juice after reading the comment that it was "too sweet". Also had some fresh sage around, so added about 6 coarsely chopped leaves of fresh sage to the apple saute step. No leftovers, my family loved it! - 8/3/11
