Shepherd's Salad

Ingredients
2 cups tomatoes, chopped2 cucumbers, peeled, seeded and chopped1 cup chopped parsley1 tablespoon pitted black or Kalamata olives, chopped1 small onion, chopped2 tbsp cider vinegar2 tbsp lemon juice4 tbsp olive oilsalt and black pepper to taste1 cup crumbled feta cheese
Directions
Combine all ingredients except cheese. Refrigerate for at least 1 hour to allow flavors to blend. Sprinkle with feta cheese before serving.

Makes 6 servings, about 1 cup each.
