Pumpkin-Stuffed Apples

2 Large Apples1/4 cup Rolled Oats2 T Brown Sugar3/4 tsp Cinnamon1/4 cup Pumpkin Pie Mix2 T Chopped Pecans1 T Unsalted Butter
Preheat oven to 350 degrees.
Core apples and hallow out slightly...not too much or apples won't keep their shape.
In a small bowl, combine oats, brown sugar, cinnamon, pumpkin pie mix, pecans, and softened butter. Incorporate well.
Spoon filling into cored apples. Be careful not to pack filling in or apples could explode during baking!
Place in deep baking dish in case of overflow. Bake for 30 minutes.
Let cool at least 10 minutes. Serve with ice cream, caramel drizzle, or on their own! Enjoy with your family during the holiday season!!
