Ingredients
1 lg or 2 sm pkgs s/f cherry, strawberry, or raspberry gelatin1 bag fresh cranberries, washed2 whole oranges, cut into wedges2 large red apples, cored and wedged2 large stalks celery, cut to chunks1 can crushed pineapple, drained2 cups splenda or equivalent.5 cup chopped walnuts or pecans (optional)water to prepare jello
Directions
Prepare gelatin per box instructions to start to semi-set. Run remaining ingredients except chopped nuts and splenda through food grinder or food processor. Mix the chopped ingredients with the sugar and about half the nuts and set aside for about 1 - 2 hours. Stir mixture into into semiset gelatin and sprinkle remaining nuts on surface of mixture. Return to refrigerator to continue to set, at least approx. 4-6 hours, or overnight is even better. It will not get as firm as plain jello, but it won't be as loose as when first mixed together.
NOTE: this recipe also works well when halved.

This sounds like the recipe I have misplaced. The only difference is I fold in one container of cool-whip when it is not quite set. I love this recipe. thanks for submitting it. - 10/16/10
