Amanda's Slow Cooker Vegetarian Chili Version #1

1 T. olive oil1 medium, yellow onion, diced1 red bell pepper, diced1 large celery stalk, diced1 large carrot, diced1 c. chopped mushrooms (I used a stir-fry blend, which included shitakes, criminis, oysters, and baby bellas)1 c. baked beans, undrained1/2 c. pinto beans, drained1 1/2 c. great northern beans, drained1 can black beans, undrained1 can whole kernel corn, drained2 cans diced tomatoes (i used chili seasoned)6 T. chili powder1 T. cumin2 T. oregano, dried2 t. salt1 t. black pepper
Makes about 6 1 1/2 cup servings.
Saute onion, pepper, celery ,carrot, and mushrooms in olive oil. If desired season with salt and pepper.
Add all ingredients to slow cooker. Cook on high for as little as 4 hours, or on high for as much as 8 hours.
