4 medium Granny Smith Apples1 Tbsp lemon juice1 Tbsp Splenda Brown Sugar Blend1 Tbsp cinnamon1 Tbsp cornstarch1 tsp salt2 Tbsp Smart Balance Buttery Spread1 cup Quaker Oats Granola
Makes 6 servings.
Using a microwave-safe medium casserole, chop apples into thumb-sized chunks, removing stem and seeds, leaving skin ON (higher fiber, better texture, more vitamins!). Toss with lemon juice.
In a sandwich bag, mix Splenda brown sugar, cinnamon, cornstarch, and salt until well blended. Add Smart balance and mush the bag until evenly mixed. Should be a fairly granular paste. Turn bag inside out over apples to transfer contents.
Toss apple mixture thoroughly, lemon juice should start to dissolve the sugar/butter mixture until it's all evenly coated.
Sprinkle top of apple mixture with granola.
Microwave on High 15 minutes. Let sit to cool, serve warm.
