Heather's Vegan Burgers

Ingredients
1/4 cup ground flaxseed3/4 cup water2 cups rolled oats2 cups walnuts1 onion, chopped3 cloves garlic, minced1/2 cup Brown Rice bread crumbs2 teaspoons sage2 teaspoons thyme1/2 teaspoon cayenne1 1/2 teaspoons salt2 carrots, grated1/3 cup, Calamata olives2 cups vegan panko bread crumbs
Directions
Mix flaxseed and water. Cook for about 5 minutes or until egg-like consistency. Set aside to cool.

Mince veggies together slightly in food processor or blender. Mix with cooled flaxseed mixture.

Grind walnuts then add with oats to veggie and flaxseed mixture.

Combine all remaining ingredients (except panko breadcrumbs.)

Form into 12 patties using a 1/3 cup measurer and coat each in the panko bread crumb mixture.

Refrigerate at least 1 hour . (May be frozen at this point.)

Fry or bake in oiled pan.
