Pita Salad Sandwiches

Ingredients
Onion Pita, 3 serving (6 halves)Red Ripe Tomatoes, 150 grams Cucumber (peeled and seeded), 90 grams Onions, raw, 45 grams Chicken Breast, no skin, 3 ounces Farmer Boy Dressing, 3 tbsp Goat Crumbled Cheese- Publix 1oz., 1 servingRomaine Lettuce, 50 grams Sabra Roasted Garlic Hummus, 1.5 oz (Chopped olives are optional)
Directions
Cut pita in half and spread 1 tbsp. garlic hummis inside each half
Dice up all other ingredients (except for the lettuce) and mix well in a bowl, including the dressing.
Spoon 1/6 of the mixture, along with however much lettuce prefer, into each 1/2 pita (don't worry...it makes plenty!)
This will make 6- 1/2 pita sandwiches

For a different twist, sppon the mixture onto a bed of lettuce and lightly grill your pita slices in a pan with some olive oil spray.
