Tomato-basil soup

Ingredients
2 t olive oil3 cloves garlic, minced4 C vegetable broth6 med tomatoes, seeded and chopped1/2 C chopped carrots1/2 C chopped onion1 C fresh basil leaves, loosely packed, chopped3 T tomato paste
Directions
Makes 6 1-cup servings

Heat the olive oil over medium heat. Add the garlic and cook for 30 seconds, stirring constantly. Add the broth, tomatoes, carrots and onion. Bring to a boil. Reduce heat and simmer until carrots are soft (about 15-20 min). Stir in basil. Run soup through a blender in batches until smooth. Return to pot and stir in tomato paste. Serve immediately.
