Veggie Omelet

Ingredients
1 tomato1/4 bell pepper green1/4 bell pepper orange1/4 onion6 big green olives pimiento stuffed1/2 sliced mushrooms1/4 cup fat free shredded cheddar cheese1/4 cup part skim mozzarella cheese1/2 cup white eggs liquid1 egg
Directions
combine egg and eggs whites liquid in a bowl and beat until fully blended. Chop all veggies and place on a pan heating on med low for about 5 min. Meanwhile spray a flat surface pan with nonstick spray and heat on medium heat, pour half of egg mixture on each end, spread evenly and cover for about 2 minutes. Remove cover and pour cheese. When cheese is melting pour veggies and fold your omelet. The cheese will work as a seal. Remove from heat and serve. Enjoy!
