2 lbs of chicken breast (boneless and skinlesss) diced in small pieces2 cups of brown grain rice1 can of rotel1 can of tomato sauce 8oz3 cups of frozen corn1 cup of fresh spinach1 tbsp of cilantro and garlic minced2 tbsps of saltPepper to taste1 tsp. of chili powder8 cups of water
throw all together in a large pot with 8 cups of water...adding water as needed and cook on low to medium. Cook till rice is tender. Serve over tortilla chips and montery jack cheese!
