Butternut Squash Frittata with Greens

Ingredients
2 cups butternut squash1 cup chopped collards (frozen)1 tbsp olive oil1 medium onion, peeled and finely sliced2 cloves of garlic, crushed8 large eggs, beaten4 tbsp grated Parmesan-style cheese1/2 tsp nutmegSalt and pepper to taste
Directions
Cook until just set (4-5 minutes). Broil until the top is golden and the frittata is cooked through (3-4 minutes). Serve warm or cold.
