Low-fat Macaroni & Tomatoes

Ingredients
1 T. butter1 T. olive oil1 can stewed tomatoes, chopped4 cloves garlic, minced3 scallions or green onions, chopped16 oz. whole wheat elbow macaroni
Directions
Cook macaroni according to directions on package. While macaroni is cooking, in large skillet combine butter, olive oil, garlic, and scallions and saute until garlic is golden. Stir in stewed tomatoes and simmer until pasta is ready. Drain pasta, add to tomato mixture and simmer for 5-7 minutes longer. Serve while hot. Makes 8 1/2 cup servings.
