Crock Creamy Sweet Potato Soup

2T Coconut Oil1 med Onion, chopped8c water6 med Sweet potato, peeled and sliced1 medium Apple, peeled and sliced1C Pumpkin1T Pumpkin Pie spiceBoullion of choice to make 8 cups8 oz light cream cheese
Place oil in frying pan and sauté onions until translucent.
Place water and sliced sweet potatoes in the crock while onions are cooking. Add apple, pumpkin, spice and bouillon.
Cook on high for 6 hours.
Add cream cheese and mix. Allow to cook on low for 1 more hour. Whisk to mix cream cheese into soup.
*Add a dollop of sour cream if you would like(not in NI)
