Light and Easy Veggie Salad

Ingredients
1/2 cup thinly sliced carrots1/2 cup thinly sliced radishes2 cups thinly sliced zucchini1 cup thinly sliced red onion1/4 to 1/2 cup white or cider vinegar1 tbsp olive oil
Directions
Use a food processor to slice veggies into small thin circular discs. If you do not have a food processor, hand slice veggies as directed.

Place veggies in a medium sized bowl.

Add vinegar and olive oil.

Add sea salt and freshly ground black pepper if desired.

Mix well and chill overnight.

Makes 10 1/2-cup servings.
