Chicken and Broccali Alfredo, low sodium

1 lb boneless, skinless chicken breast, cut in 1" cubes1 lg onion, chopped4 cups broccali flowerettes1 can (14 oz) diced tomatoes, no added salt, drained1/4 cup light cream cheese1 Tbsp olive oil plus 1 tsp o.o.1/4 tsp black peppe1 Tbsp flour1/2 tsp dried thyme
Heat 1 T.oil, med high heat, add chicken, cook 4 min. or till browned. Remove from skillet.
Add 1 tsp oil, onion and pepper, cook 5 min. or till soft. Add flour, cook 1 min stirring. Add broccali, thyme, 1/2 cup water ( or chicken broth, no added sodium), cover, cook 4 min or till broccali is crisp- tender.
Remove cover, add chicken, tomatoes and cream cheese. Stir till well blended.
Serves 4.
