1 can black beans, rinsed and drained2 cups frozen sweet corn, thawed1/4 jicama, diced1 large red bell pepper, diced1 tablespoon canola oil1 tablespoon fresh cilantro1 teaspoon (or to taste) cumin

Place all ingredients in a large bowl. Stir to combine, then chill 1-2 hours before serving.
