French Lentil Rice Soup

6 cups chicken boullion1 cup dried lentils, rinsed and picked over2 medium carrots, peeled and thinly sliced1 small onion, finely chopped1 celery stalks, finely sliced3 Tbsp uncooked white rice1 tsp crushed garlic1/8 tsp ground black or white pepper1 Cup leftover rotisserie chicken, shredded1/4 Cup Low fat Sour Cream(optional)1/4 cup chopped parsley, divided (optional)
Stir together broth, lentils, carrots, onion, celery, rice, garlic, thyme, salt and pepper in slow cooker. Cover and cook on low for 8 hours or on high for 4 to 5 hours.
Remove 1 1/2 cups soup and pur'ee in a food processor or blender until almost smooth. Stir puree'd soup back into the slow cooker.
Add shredded chicken 5 to 10 minutes prior to serving or until chicken is warmed through.
Divide soup evenly amoung 4 bowls, garnish each with 1 Tbsp sour cream and 1 tbsp chopped parsley, if desired.
