2C chopped zucchini (two whole)3/4C chopped onion (half an onion)1T Smart Balance Buttery Spread1/2T Olive Oil1/4t black pepper
Melt Smart Balance in a frying pan. Fry chopped onions for about 3-5 minutes. Add chopped zucchini and spread olive oil over them. Stir occasionally. When zucchini is just starting to brown and onions are translucent, sprinkle on the pepper. Give another stir and serve. Makes 4-1/2 cup servings.
