Turkey Sausage Sandwiches

Ingredients
1 tablespoon plus 1 teaspoon olive oil2 med. white onions, halved, sliced 1/4 inc thick, lengthwise3 red or orange bell peppers, sliced 3/4 inch thickcoarse salt & ground pepper4 spicy or sweet Italian turkey sausages (about 1 pound total)4 hoagie rolls or 1 loaf french bread (cut into 4 pieces), split & toastedGrainy mustard, (optional)
Directions
In a large skillet, heat 1 Tablespoon oil over med-high. add onions & peppers: cook, stirring occasionally, until beginning to brown, about 7 minutes. Season w/ salt & pepper and add 3/4 cup water;cover & simmer for 3 minutes. Uncover & cook, stirring occaisionally, until vegetables are soft & liquid has evaporated, 2 minutes.

Meanwhile, heat 1 teaspoon oil in a small skillet over medium. Add sausages & cook, turning occaisionally, until browned and cooked through, 10-12 minutes. Place sausages & vegetables on bread and top w/ mustard if desired.
