Turkey Mushroom Meatloaf Muffins

1.25 lbs extra lean ground turkey (Jennie O)12 oz crimini mushrooms, diced (or other mushroom variety)1 onion, finely diced4 cloves garlic, minced (or more to taste)1/4 cup parsley, finely chopped2 tbsp sherry1 tsp soy sauce1 tbsp olive oil1 tbsp margarine (45 cal, 5 g of fat variety)1/2 tsp salt1/4 tsp pepper
Preheat oven to 350. Spray muffin tin with cooking spray.
Sautee onion with oil and margarine over medium heat for about 5-8 minutes, until tranlucent.
Add garlic, sautee 1-2 minutes.
Add mushrooms, sautee until water releases, about 5 minutes.
Add sherry and soy sauce, sautee until resembles paste, about 3 minutes.
Add parsley, sautee about 2 minutes.
Put in bowl with ground turkey, salt and pepper, mix until well combined.
Distribute evenly into 12 muffin tins. Bake for 22-28 minutes. Tastes great with ketchup!
