Butternut Squash Soup

Ingredients
Ingredients:8 cups cubed Butternut Squash1 cup Carnation Fat Free Evaporated milk1 medium Onion, chopped1/4 tsp ground Nutmeg1 tsp Olive Oil3 cups Blue Menu Chicken Broth - no salt added1 tsp ground black pepper2 oz asiago cheese, grated
Directions
Boil squash 20 min until tender - drain

Saute onion in tsp of olive oil until lightly browned, add squash, milk, broth - simmer 15 min. blend until smooth. add pepper and nutmeg. stir

makes 8 x 1 cup servings. Top with 1/4 oz grated asiago cheese.
