1 lb Chicken breasts (bone-in), skin removed and fat trimmed4 stalks celery, with leaves4 carrots, peeled and halved2 onions (optional)2 bay leaves1 parsnip, peeled and halvedFresh parsleysalt
Place chicken, celery, carrots, onions (if using), bay leaves, parsnip and parsley and salt to taste in a large stockpot and add 12 cups (3 L) of water, or enough to fully cover ingredients. Bring to boil over high heat. Reduce heat to medium-low and simmer, partially covered for 1 1/2 hours, until stock is flavorful and liquid is reduced by about one-quarter. Strain stock through a fine-mesh sieve set over a large bowl. (Chicken and vegetables may be saved for use in other recipes.)
