Broccoli Spinach Soup with Apples & Leeks

2 T. butter4 leeks, white/light part only, chopped1 package broccoli slaw, chopped4 c. spinach, chopped1 Q. swanson organic vegetable broth1 apple, peeled & chopped1 large potato, peeled & chopped1 T. kosher salt1/2 c. light creamground nutmeg to taste
melt butter. add leeks and saute for several minutes. Add slaw, spinach, apple and potato, and continue cooking until everything is soft. Add salt and broth and bring to a boil. Lower heat, cover and continue cooking for about 15 minutes. Use an immersion blender to blend soup. then add cream and combine well. season with nutmeg and serve.
