Denver Omelet Scramble

Ingredients
1/4 cup ham, diced1/4 cup onions, chopped1/4 cup green pepper, chopped7 large eggs, whisked3/4 cup shredded lowfat mozzarella
Directions
Chop ham, onions, and green pepper. Saute in a non-stick pan with no calorie butter flavor spray. Add eggs and cheese and scramble until eggs are cooked. Makes 3 1/2 servings.

***Ham, onion, and green pepper may be chopped in advance in large portions and frozen. Hit bag of frozen mixture with a meat tenderizer to loosen up 3/4 cup of mixture and follow recipe as written, allowing a little more cooking time for frozen veggies and ham.
