Oatmeal Chocolate Chip Cookies

Ingredients
1 1/2 cup Whole Wheat Flour1 tsp Baking Soda1/2 tsp Cinnamon1/2 cup coconut oil1 1/3 cup Stevia in the Raw1 egg1 1/4 tsp vanilla extract1/2 cup Oats1 cup Hershey's Special Dark Chocolate Chips
Directions
1. Combine flour, baking soda, and cinnamon in a medium bowl. Whisk together oil, and stevia in a large bowl. Whisk in egg and vanilla until smooth. Stir in dry ingredients until blended. Fold in oats and then chocolate.

2. Cover and chill dough for at least 15 minutes. Meanwhile, heat oven to 375 degrees.

3. Shape dough in to 16 balls. With hands, use a little pressure. Place 8 balls on each cookie sheet, lightly coated with coconut oil.

Bake for 7-10 minutes. Do not overbake! Remove from pan pace on wire rack to cool.
