1 speghetti squash1/4 cup parmesan cheese grated1/2 cup mozzarella cheese shredded2 tablespoon olive oil2 teaspoons garlic
poke holes in squash to let steam out
microwave on high 10 mins or until soft to the touch.
cut in half. remove seeds. scrape inside out into bowl.
add cheese garlic and oil. microwave on high 2 mins.

This was so good! Lucky for me the calories are so low I could go back for seconds and that I did! I will probably try freezing the leftovers for dinners later this week. I accidently left out the olive oil and it still turned out great. I might add some tomatoes next time too! Fantastic - 8/28/12
