Cherry tomatos or grape tomatos, cooked or canned white beans (great northern beans), dill, red onion, balsamic vinagrette, olive oil.
Cut tomatos in half. Dice onion. Mix in white beans, dill , oil, and balsamic vinagrette. (As an option for the beans - use dry beans, long soak, then cook 1 1/2 - 2 hrs in mix of chicken stock). Thoroughly stir and set overnight for maximum integration of flavor. Serve at room temperature or chilled. Makes 6 - 3/4 c. servings.
