Vegetable Stock

Ingredients
1 - onion, peeled and chopped2 - carrot, peeled and chopped4 - tomatoes1 - cup mushrooms1 cup - parsley stems5 - garlic cloves, crushed2 inches - gingerroot6 - black peppercorns1 - bay leaf10 - cups water
Directions
1. Put all the ingredients, except salt, in a pot and cover with cold water, simmer for 1 hour
2. Strain the stalk ad discard the vegetables, add sea salt to taste
3. Store in refrigerator or freezer
