Dough2 c. white flour2 c. sour cream2 egg whites1/2 t. saltFilling2 egg yolks2 c. dry curd cottage cheese (if you cannot find dry, use ricotta and decrease yolks to one)1/2 t. pepper1 t. salt2 minced green onions not traditional but yummy
Mix dough ingredients into a ball, cover and chill 1 hour or a day or 2 ahead. Mix filling. Roll out dough and cut in large circles with cookie cutter of a glass. Place a tablespoon or so filling (depending on size of circle) on circle. Fold circle over the filling and seal the edges using egg white if needed. Gently slide the filled dumpling into boiling salted water 2 or 3 at a time (depending on the size). Remove from pot with slotted spoon when dumpling have risen to the top. May be eaten as is or served with gravy. Sometimes we liked to fry the cooked dumpling. Guten tag und gazuntight!
