Stir Fried Barley & Vegetables

Ingredients
2 cups cooked pearl barley1 cup chopped bell peppers1 cup chopped onion3 cloves minced garlic1 10 oz. bag mixed vegetables (thawed)1 tbsp. lite soy sauce1 tsp. cayenne pepper1-2 tbsp. canola oil
Directions
In a large non-stick saute pan or wok heat oil on medium high heat.
Add chopped peppers and onions and saute until onions turn transluscent. (1-2 minutes)
Add thawed vegetables and toss or stir for an additional 2 minutes.
Add garlic, soy sauce, and cayenne, stir and reduce heat to medium
Add cooked barley and stir or toss constantly until barley begins to brown slightly ( 4-5 minutes)
