Eggs n Sauce

4 extra large eggs1/2 cup tomato sauce3 oz lean ground turkey 1/2 cup fat free ricotta2 tbsp grated cheeseblack pepper to taste2 zucchinis chopped1/4 cup onions chopped1 tsp. olive oil
Beat eggs with some added water until mixed well. Heat a non stick pan sprayed with cooking oil over medium heat. Brown ground meat in pan. Remove from pan.
Add 1 teaspoon olive oil to pan and saute the zucchini and onions until tender. Remove from pan and keep warm.
Spray pan again if needed and add beaten eggs. When eggs are beginning to set on the bottom add the meat and the ricotta distributing throughout the egg, Add black pepper. When eggs are just about set add sauce to pan and mix into the eggs. Serve on plate over zucchini and onion mixture with 1/2 tbs. grated cheese or to taste.
