lima bean soup

Ingredients
I # dried lima beans1/2 cup pearled barley1 large onion chopped3 or 4 cloves garlic chopped1 cup chopped carrots1/3 chopped sweet red pepper1 cup fresh mushrooms or 1 large can1 cup chopped kale1 bouillon cube- vegie or chicken1 T olive oil
Directions
Sort beans and wash.
Put in slow cooker and cover with water.
Put on high and start cooking if you are going to be gone all day move to low after it becomes hot.
Rinse the barley and add it.
Be sure you have lots of water in your cooker.
Let cook 3 or 4 hours.
Then chop onion, carrots, garlic, pepper, and mushrooms and saute in the olive oil.
Add vegies and bouillon to the cooker.
Let cook and hour of so.
Chop the kale and add to cooker.
Let cook for 30 minutes to an hour.
Makes 10 to 12 servings.
