Mango Chutney

Ingredients
1 Ripe Mango½ Green Bell Pepper finely chopped½ Small Red Onion finely chopped1 Tablespoon of Fresh Grated Ginger2 Tablespoons of White Vinegar2 Tablespoons of Sugar¼ Teaspoon Turmeric¼ Teaspoon ClovesFreshly Ground Black Pepper to taste
Directions
Peel, halve and seed the mango. Cut ii into ½ inch cubes.

Combine the mango with all the other ingredients in a deep 1½ quart microwave-safe casserole. Stir thoroughly.

Cook, uncovered, at full power for 10 minutes. Stir and cook for a further 10 minutes on full power.

Allow the chutney to cool slightly, then cover tightly and refrigerate. It will keep for 1 week in the refrigerator.
