English muffin breakfast pizzas

Ingredients
6 English muffins 4 eggs1/4 cup milk8 slices of cooked bacon, chopped 6 slices American cheeseOptional: Chopped vegetables like mushrooms, peppers, green onions, tomatoes, etc.
Directions
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and spray liberally with non-stick cooking spray
In a large, shallow bowl, stir together the eggs and milk. Separate English muffins and soak each side in the egg mixture. Poke a bit with a fork so the egg truly soaks into the muffin. Place the muffins, cut side up, on the baking sheet. Pour any remaining egg mixture evenly over the muffins.

Sprinkle chopped bacon on top. Add any additional desired toppings and then tear 1/2 slice of American cheese and arrange on top. Bake for 15 minutes and serve immediately.

FREEZER INSTRUCTIONS: After baking, loosen them from the baking sheet with a spatula and then allow them to cool completely. Transfer the baking sheet to the freezer. When the pizzas are solid, transfer them to a large freezer bag. To reheat, place on a plate and microwave for 1 1/2 minutes at a time until the pizza is heated through (actual time will depend on your microwave's power).
