Roasted Carrot & Orange Salad

600g carrots, scrubbed & halved lengthwise2 Tbl olive oil1/4 tsp cinnamon1/4 tsp ground cuminSea salt to taste4 oranges1 1/2 tsp sugar1 tsp orange flower water1/4 cup mint leaves, finely sliced
Preheat the oven to 300C. Place the carrots in a bowl with 1 tablespoon of the oil, the cinnamon, cumin and salt to season. Stir well to combine and place on an oven tray lined with baking paper and roast for 40 minutes or until the corrots are tender.
Meanwhite, mix together in a large bowl the juice of 1 orange with the reaming olive oil, the sugar and orange flower water. Peel the remaining oranges and slice thinly.
When the carrots are cooked, place in a bowl with the dressing. Add the carrots while still warm as this helps them take up the flavours of the dressing. Set aside until ready to serve. Add the sliced oranges and mint then mix to combine.
