Vegetarian Beef Stroganoff

Ingredients
1 package Quorn Crumbles (12 oz)1 medium onion chopped1 Tbsp olive oil1 tsp salt1 tsp garlic salt or 1 clove minced1/4 tsp pepper1 can (8 oz) mushrooms1 can cream of mushroom soup1 cup sour cream (I used light in the calorie count)2 cups cooked egg noodles
Directions
1) In skillet heat oil and cook onions until tender. Add Quorn and a little bit of water for moisture and cook until heated through. Stir in salt, garlic, pepper, and mushrooms; cook 5 minutes, stirring constantly.
2) Stir in can of soup (still condensed, no water added); simmer uncovered 10 min. Stir in sour cream. Sprinkle with snipped parsley (optional)
3) Serve over hot egg noodles or stir in noodles. Great with rice too!

    I made this for my vegetarian daughter & she loved it! I used fresh mushrooms rather than canned, but otherwise followed the recipe. A quick & satisfying meal with the noodles. - 10/18/10
