Quinoa and Potato Croquettes

Ingredients
1 large russet potato1 cup cooked quinoa1 small onion finely diced2 tbsp vegetable oil2 tsp paprika1 tsp ground coriander1 tsp ground cumin1/2 tsp dried oregano2 garlic cloves minced1/4c. chopped parsley1 egg1/3c. 1% cottage cheese1c. fresh or dried bread crumbssalt boil potato until tender, mash with fork and mix with cooked quinoa. Saute onion in oil over medium heat for 2 minutes, add spices and oregano; cook stirring frequently until onion is soft - about 8 min. Add garlic and cook 1 more minute. Add this to potato/quinoa mixture along with egg, parsely, cottage cheese and salt. Mix ingredients and divide and shape into 8 small ovals. Press each croquette into bread crumbs. Generously film nonstick skillet with oil and set over medium heat; when hot add croquettes and cook on both sides until brown.
