Warm Greens & Bread Salad

Olive Oil, 1tspOnions, raw, 1/4 cup, choppedCrushed red pepper flakes, 1 tspMustard & Turnip Greens, 4 cups, chopped Lemon Juice, 1 tbspWhite Vinegar, 1 tbspDijon Mustard, 1 tbspNature's Own Specialty Whole Wheat Bread, 2 slices, toastedParmesan Cheese, grated, 2 tbsp
1. Heat olive oil in large skillet with lid. When oil is hot, add onions and saute until soft. Add crushed red pepper flakes.
2. Add greens, vinegar, lemon juice and dijon mustard. Cover with lid and allow greens to stem for a few minutes until soft. Remove from heat.
3. Place greens and onions in a large bowl. Tear the toasted bread slices into chucks and lightly mix with the greens. Add the parmesan cheese and toss once more.
4. Serve quickly and warm so the bread doesn't get soggy.
