Pumpkin Steel Cut Oatmeal

2 cups steel cut oats10 cups water, divided5 scoops whey protein powder, vanilla flavored (MRM 100% natural)1 1/4 cups ground flax seed meal1 1/2 cups Ideal sugar substitute (could use Xylitol or Splenda)1 tsp. salt1 tsp. cinnamon1 tsp. pumpkin pie spice1 tsp. vanilla1 can pumpkin (not pumpkin pie filling)
Bring 8 cups of water to boil in large stock pot. In a bowl, protein powder into 2 cups of water. Add protein powder mixture to boiling water. Stir in steel cut oats and all other ingredients, except pumpkin. Bring to a boil. Reduce heat to low. Cover and simmer for 20 minutes. Stir in pumpkin and serve immediately, or divide into 10 individual containers and refrigerate.
