Courgette and bacon crumble

Egg, fresh, 6 medium *Milk, 2%, 3 fl oz Bacon, 3 medium slices, raw, chopped (optional)Onions, raw, 1 cup, chopped Zucchini, 2 cup, sliced Olive Oil, 1 tbsp Bread, whole wheat 200 grams Cheddar Cheese, 100 grams
Beat eggs and milk and season with salt and pepper.
Saute bacon and onion for 2 minutes then add courgette and saute gently for a further 5 minutes.
In a round ovenproof dish place courgette mixture. Sprinkle with some chopped basil or chives. Pour egg mixture on top and bake in a medium oven for 30 minutes.
Grate cheddar, put bread into food processor and turn into crumbs, mix with cheese.Sprinkle cheesy breadcrumbs onto partly baked mixture and bake for a further 30 minutes.
Serve hot or cold with a crispy salad.
