1 1/3 cup of red lentils1 tbsp canola oil1 onion, chopped5 garlic gloves, minced2 tsp cumin, ground2 tsp coriander, ground1/2 tsp turmeric, ground14 oz chopped tomatoes3 cups vegetable stock2 carrots, chopped2 cups cauliflower florets1 cup zucchini, chopped1/4 cup whipping cream2 tbsp cilantro
Rinse lentils. Heat oil and saute onion and garlic for 3 minutes or until soft. Add spices and stir for 30 seconds. Add lentils, tomatoes and stock. Bring to a boil and cover and simmer for 20 minutes. Stir in carrot and cauliflower and cover and simmer for 10 minutes. Add the zucchini and simmer for a further 5 minutes, covered. Stir in the cream and season to taste. Serve scattered with the cilantro leaves. Nice to serve with naan bread.
