Lemon Chicken Soup

2 C. chopped, cooked chicken breast2 C. sliced carrots.5 C. chopped onion1 garlic clove1-2 lemons (apx .25 cup juice, & 1 tsp Zest!)1 can Fat free Cream of Chicken soup3 cans or 45 oz. Fat-free / low sodium Chicken brothPepper to taste.66 C. Long-Grain White Rice (uncooked)2 Tbsp. Parsley
Heat large pot over medium heat – spray with non-stick spray and cook carrots, onion and garlic for 3-5 minutes. Zest lemon to measure 1 tsp; Juice lemons to ¼ C. juice – set aside.
Stir in chicken, lemon zest, lemon juice, soup, broth and pepper. Bring to a boil. Add rice and reduce heat to simmer and cover. Cook 15-20 minutes or until rice is cooked. Add Parsley.
Serves 6-8
