Egg, fresh, 2 large Milk, nonfat, 1 cup Heart Smart Bisquick (mix only), 0.50 cup Gimme Lean meatless sausage, 7 oz 2% Shredded Cheddar Cheese, 1 cup Cauliflower, raw, 1 cup Mushrooms, canned, 1 cup Broccoli, fresh, .25 cup, chopped Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)
Pre-heat oven to 400
"Fry" up fake sausage and place in the bottom of a 8 x 8 cake pan. Then use skillet to soften vegetables, using some of the mushroom liquid and place in cake pan.
Mix eggs, bisquick, and milk (and seasonings as desired) until combined and pour over pan. Then top with cheese.
Bake in oven until cooked through.
