2 cups uncooked quick-cooking oats1/2 cup packed brown sugar1/3 cup craisins1 tablespoon chopped pecans1 teaspoon baking powder1 teaspoon cinnamon1 teaspoon pumpkin pie spice1/2 teaspoon nutmeg1/2 teaspoon allspice1 1/2 cups fat-free milk1/2 cup canned pumpkin2 tablespoons butter, melted1 large egg white, beatenCooking spray
Preheat oven to 375°.
Combine the first 9 ingredients in a medium bowl. Combine the milk, pumpkin, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.
