Ingredients
5 raw potaotes, scrubbed and diced to about 1", with skin on1 cup chopped onion Any left over meat (recipe calculated with 5 oz. tri tip)2 tablespoons vegetable oilSalt and pepper to taste
Directions
Heat oil in large cast iron skillet. Add onions and potatoes, cook over medium heat until potatoes are just starting to get soft. Add diced beef, cover and reduce heat to low. Cook until potatoes are soft and beef is heated through. Stir occaisionally to keep potatoes from sticking.
