Ingredients
1 3/4 Cup whole Wheat flour3/4 cup milled flax seed1 1/2 tsp baking powder1 tsp baking soda----mix dry ingredients in a bowl---- 3/4 cup sour milk (sour milk by adding 2 tbsp white vinegar)3/4 cup brown sugar1 egg2 cups crushed pineapple2 cups shredding carrot1/4 cup chopped walnuts1/2 cup raisin1 tsp cinnamon----Mix then add to the dry mixture. pour into muffin tins. Bake at 400 degrees for 25 min. Yields 22 muffinsCream cheese frosting4 oz fat free cream cheese.1/2 cup powdered sugar1 tsp lemon juice1/2 tsp cinnamon (optional)
Directions
Mix dry and wet ingredient seperately. mix them together.
bake 400 for 25 min. Frost when cool
