Cheesy Bacon Potato Skins

3 Russet Potatoes5 Bacon slices1 1/4 Cup of Sharp Cheddar Cheese, grated1 1/4 Cup of Mozzarella Cheese, grated2 Tblsp chopped basil
Brush the potatoes with some olive oil, then bake until tender, about an hour. Halve the potatoes and scoop out the insides (insides can be used to make mashed potatoes later on!) just enough to make a good shell (leave about a quarter of an inch around the potato).
Fry the bacon up in a pan until crispy, pat off any extra grease and roughly chop. Add chopped bacon in with cheeses and basil until evenly coated. Scoop into potato shells and bake on a sheet until cheese is melted and slightly browned, about 25 minutes.
Let cool slightly and enjoy!
